Day 2

Today was pretty amazing and I actually got to sleep for 7 hours last night thankfully! Feeling rested in the morning really helps in making good food choices throughout the day. I discovered how to make caramelized onions in a slow cooker on Pinterest today which was really cool considering how much I love my slow cooker. All you need to do is slice 2 onions (or as many as you’d like really) very thinly and mix with 2 tablespoons of oil and set to low for 6 hours. I also made rosemary “French fries” and wilted spinach served with my classic instant pot lemon garlic chicken.
